I figured I’d do something a little different today. How about a simple recipe? This is Jenn’s Simple Curry, which was made from ingredients that I already had, including the random vegetables. It’s a vegetarian meal, too. I always have curry paste and a can of coconut milk on hand in case I need to make a simple dinner. This recipe serves about 4-6 people.
1 can of cooked chickpeas
1 can of string beans
1 can of spinach
1 can of coconut milk
1 fresh green pepper, chopped
2 tablespoons of Patak’s Mild Curry Paste, or as much as you like
Open cans and drain water from vegetables. Combine ingredients into a large pot and simmer on low heat for about an hour. Serve over rice and with naan bread.
You can use whatever vegetables you prefer, actually. Tomatoes taste good in the curry, but make it watery, though.
